- 1 package peanut butter chips
- ½ cup butter
- 2 cups Rice Krispies
- 1 cup coarsely chopped peanuts
- 1 ¼ cup powdered sugar sifted
- 2 cups semi-sweet chocolate chips
- ¼ cup vegetable shortening, coconut oil, or butter
In a large saucepan, combine the peanut butter chips and butter. Stir over very low heat until the peanut butter chips melt and the mixture is smooth. Remove from the heat.
Stir in the Rice Krispies, chopped peanuts, and sugar. Mix well. The mixture will be crumbly.
Shape into 1-inch balls. Place the balls on a cookie sheet lined with parchment or waxed paper. Refrigerate for about 30 minutes.
Melt the chocolate chips and vegetable shortening together over low heat. Stir to combine.
Dip balls into the chocolate and cover with chocolate.
Place dipped balls on wax paper on a cookie sheet. Refrigerate for 30 minutes.
