Ingredients

  • 1 package peanut butter chips
  • ½ cup butter
  • 2 cups Rice Krispies
  • 1 cup coarsely chopped peanuts
  • 1 ¼ cup powdered sugar sifted
  • 2 cups semi-sweet chocolate chips
  • ¼ cup vegetable shortening, coconut oil, or butter

Instructions

  • In a large saucepan, combine the peanut butter chips and butter. Stir over very low heat until the peanut butter chips melt and the mixture is smooth. Remove from the heat.
  • Stir in the Rice Krispies, chopped peanuts, and sugar. Mix well. The mixture will be crumbly.
  • Shape into 1-inch balls. Place the balls on a cookie sheet lined with parchment or waxed paper. Refrigerate for about 30 minutes.
  • Melt the chocolate chips and vegetable shortening together over low heat. Stir to combine.
  • Dip balls into the chocolate and cover with chocolate.
  • Place dipped balls on wax paper on a cookie sheet. Refrigerate for 30 minutes.
