Ingredients

  • 1 pound ground chuck
  • 1 pound ground pork
  • 1 large egg
  • ¼ cup whole milk
  • ½ cup breadcrumbs
  • ½ teaspoon parsley
  • ½ teaspoon onion powder
  • ½ teaspoon ground black pepper
  • 1 pound bacon each slice cut in half
  • 1 cup barbecue sauce

Instructions

  • Preheat the smoker to 180°F.
  • Combine the ground chuck, ground pork, egg, milk, breadcrumbs, parsley, onion powder, and pepper in a large bowl. Mix until thoroughly combined.
  • Form the mixture into 1 ½–ounce meatballs. Wrap each meatball with ½ of a slice of bacon and secure with a toothpick.
  • Place the meatballs in the smoker for approximately 1 hour.
  • Increase the temperature of the smoker to 350°F and cook the meatballs for another 20 to 30 minutes, or until the internal temperature reaches 165°F. About 10 minutes before the meatballs are done, mix the barbecue sauce with 2 tablespoons of water and brush the mixture onto the meatballs.
  • Remove the meatballs from the smoker and allow them to rest for 5 minutes before serving.
