- 1 pound ground chuck
- 1 pound ground pork
- 1 large egg
- ¼ cup whole milk
- ½ cup breadcrumbs
- ½ teaspoon parsley
- ½ teaspoon onion powder
- ½ teaspoon ground black pepper
- 1 pound bacon each slice cut in half
- 1 cup barbecue sauce
Preheat the smoker to 180°F.
Combine the ground chuck, ground pork, egg, milk, breadcrumbs, parsley, onion powder, and pepper in a large bowl. Mix until thoroughly combined.
Form the mixture into 1 ½–ounce meatballs. Wrap each meatball with ½ of a slice of bacon and secure with a toothpick.
Place the meatballs in the smoker for approximately 1 hour.
Increase the temperature of the smoker to 350°F and cook the meatballs for another 20 to 30 minutes, or until the internal temperature reaches 165°F. About 10 minutes before the meatballs are done, mix the barbecue sauce with 2 tablespoons of water and brush the mixture onto the meatballs.
Remove the meatballs from the smoker and allow them to rest for 5 minutes before serving.
