- 1 tablespoon butter
- 1 tablespoon minced garlic
- 2 teaspoons minced ginger
- ½ cup soy sauce
- ¼ cup honey
- 1 tablespoon brown sugar
- 2 pounds chicken wings cut into drumettes and wingettes (wing tips removed)
- vegetable oil for deep frying

Place the butter in a medium-sized pot over medium heat. Add the garlic and ginger and cook until fragrant and softened. Then add the soy sauce, honey, and brown sugar. Stir to combine and cook until heat through. Set the sauce aside as you prepare the wings.
Pat the wings dry with a paper towel.
In a deep fryer, heat the oil to 375°F and fry the chicken wings for 10 to 12 minutes, until they reach an internal temperature of 165°F. Remove the wings from the fryer and transfer to a wire rack.
Place ¼ of the fried wings into a medium bowl. Add a ladle of sauce and gently toss. Repeat until all the wings have been coated in sauce. Garnish with chopped scallions and serve.
