    Ingredients You Will Need 

    For these Buffalo boneless chicken breast bites, you'll need:

    • Chicken breast
    • Salt 
    • Ground black pepper 
    • Vegetable oil 
    • Butter
    • Hot sauce
    • Cornstarch 
    • Water
    • Minced garlic 

    You can use your favorite brand of hot sauce in the sauce, but Frank's Red Hot Sauce is the traditional choice.

    How to Make Buffalo Bites 

    To prepare Buffalo boneless chicken bites:

    1. Pat the chicken breasts dry with a paper towel. 
    2. Slice the chicken into one-inch chunks and put it in a mixing bowl. Add salt and pepper to the bowl and stir to coat the chicken pieces with the seasonings evenly.

    1. Heat a large pan over medium heat.
    2. Pour vegetable oil into the hot pan, and add the chicken when the oil begins to shimmer.
    3. Cook the chicken without stirring on the first side for about four minutes. Flip the chicken pieces over and cook on the other side for about three more minutes.

    1. While the chicken is cooking on the second side, melt the butter for 30 seconds in the microwave.
    2. Stir the hot sauce into the melted butter and set aside.
    3. In a separate bowl, whisk together the cornstarch and the water to make a slurry. Set it aside.
    4. When the chicken finishes cooking, add the minced garlic to the pan. Continue to stir until the garlic becomes fragrant.
    5. Pour the melted butter and hot sauce over the chicken in the skillet and stir to coat the chicken.

    1. Add cornstarch slurry to the skillet. Continue to stir until the sauce starts to thicken.
    2. Remove the chicken from the heat and serve immediately.

    Equipment You Will Need 

    You won't need any special equipment for this recipe; however, an extra-large skillet will let you cook all the chicken at once without overcrowding the pan. You can cook this recipe on the stovetop or take the skillet outside to the grill if you prefer. 

    Sauce Variations You Can Try

    Want something a little different? Follow the recipe above, but substitute the hot sauce and butter with one of the alternative sauces below:

    • Nashville Hot: Melt four tablespoons of butter in the microwave. Whisk the melted butter with one and a half tablespoons of cayenne pepper, one tablespoon of brown sugar, one and a half teaspoons of smoked paprika, and a half teaspoon each of ground black pepper and salt. 
    • Lemon Pepper: Melt four tablespoons of butter in the microwave. Pour in the juice from half of a lemon (about two tablespoons). Whisk in the zest from the entire lemon, a tablespoon of freshly ground black pepper, and a half teaspoon of salt.  
    • Parmesan Garlic: Melt four tablespoons of butter in the microwave. Whisk a half cup of finely shredded parmesan cheese into the butter. Stir in half a teaspoon each of garlic powder, freshly ground pepper, and salt.

    What to Serve With Them 

    Celery and carrot sticks are the perfect sides. Keeping bowls with ranch and blue cheese dressing handy will please dippers.

    How to Store the Leftover Chicken Bites 

    It is not a good idea to save any extra chicken bites at the end of a party for sanitary reasons, but you can prepare the boneless bites a day or two ahead of time and keep them in an airtight container in the fridge.

    Make sure to cool the chicken bites on a wire rack to room temperature before putting them away. 

    What's the Best Way to Reheat Them?

    Reheating the boneless chicken bites in the oven is hands-free and gives great results:

    1. Preheat the oven to 350°F.
    2. Line a rimmed baking tray with parchment paper to prevent a cleaning nightmare.
    3. Spread the Buffalo boneless chicken bites on the parchment paper and put the baking tray in the oven for about 12 to 15 minutes, or until the chicken bites are hot. Turn the chicken pieces over after six minutes.

    Ingredients

    • 1 ½ pounds chicken breast cut into bite-sized pieces
    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • 1 tablespoon vegetable oil
    • 2 teaspoons minced garlic
    • 1 cup Frank’s Red Hot Sauce
    • 2 tablespoons butter melted
    • 2 teaspoons cornstarch
    • 1 tablespoon water

    Instructions

    • Blot the chicken dry with a paper towel and season with salt and pepper.
    • Heat the vegetable oil in a large skillet over medium heat. When the oil is hot, add the chicken to the skillet. Cook on each side for 3 to 4 minutes. Then reduce the heat, add the minced garlic, and cook just until the garlic becomes fragrant.
    • While the chicken is cooking, combine the Frank’s Red Hot Sauce and the melted butter in a small bowl and mix well.
    • Pour the sauce over the chicken in the skillet.
    • Make a cornstarch slurry by combining the cornstarch and water in a small dish. Mix well.
    • Pour the cornstarch slurry into the skillet to thicken the sauce. Stir until the chicken is coated. Remove from the heat and serve.
