Furikake Chex Mix

Ingredients

Chex Mix

  • 4 cups Corn Chex
  • 4 cups Wheat Chex
  • 4 cups Honeycomb cereal
  • 4 cups Bugles
  • 1 cup pretzels
  • 2 cups Fritos
  • 1 cup wasabi peas

Syrup

  • ½ cup unsalted butter 1 stick
  • ½ cup sugar
  • ¼ cup neutral oil
  • 2 tablespoons soy sauce
  • ½ cup corn syrup

Seasoning

  • 1 jar nori komi furikake

Instructions

  • Preheat the oven to 250°F.
  • In a large bowl combine the Corn Chex, Wheat Chex, Honeycomb cereal, Bugles, pretzels, Fritos, and wasabi peas. Mix well.
  • Place the unsalted butter, sugar, vegetable oil, and corn syrup in a medium pot over medium-low heat, stirring occasionally. When the butter has melted and the sugar has dissolved, add the soy sauce and stir. Turn off the heat.
  • Drizzle the sauce over the cereal mixture and gently mix until the cereal is well coated. Sprinkle the furikake over the cereal.
  • Distribute the seasoned Chex mix between 2 large, rimmed baking sheets and bake in the preheated oven for 1 hour, turning the cereal every 15 minutes. Watch carefully during the last 15 minutes of cooking and remove from the oven if the Chex mix appears to be browning too much—it should be browned but not burnt.
  • Allow the cereal to cool. You may want to break up the Chex mix gently. Store in an airtight container.
