    Easy Rotel Dip With Chicken Ingredients

    For this recipe, you'll need:

    • Cooked chicken
    • Cream of mushroom soup, canned
    • Rotel Diced Tomatoes and Green Chilies
    • Cheddar cheese, shredded

    You can use any leftover chicken in this dip. But if you want to pump up the flavor, select chicken with a Tex-Mex-inspired flavoring or smoked chicken. Store-bought rotisserie chicken can be a good value and works well in this recipe. Or simply boil chicken breasts in a large pot of water until they are done (internal temp is 165°F).

    How to Make This Easy Chicken Rotel Dip Recipe

    To prepare Rotel Chicken Dip:

    1. Preheat the oven to 325°F.
    2. While the oven is warming up, chop the cooked chicken into bite-sized pieces. 
    3. Mix the chopped chicken, mushroom soup, and Rotel together.
    4. Pour the mixture into a two-quart casserole dish and top with the cheese.

    1. Bake the dip uncovered until the cheese melts and the other ingredients begin to bubble, about 20 to 30 minutes.  
    2. Let the dip rest for a minute or two to stop sizzling, and then serve.

    Recipe Variations 

    There are many ways to customize this chicken queso dip recipe to suit your taste. The easiest is using a different flavor of Rotel. Like it hot? Choose the Serrano or Hot variety. Cans of Hatch or Chipotle-flavored Rotel will add a pleasant smoky taste to the dish.

    Another option is swapping a different cheese for the cheddar. Try Pepper Jack for a little bit of a kick or Queso Blanco for extra creaminess and a subtle tang. Do you want your dip extra creamy? Go with Velveeta cheese or cream cheese instead.

    You can swap the mushroom soup with cream of chicken soup. 

    If you like loaded dips, black beans, sweet corn, chopped onions, crumbled bacon, and a dollop of sour cream are all great additions. Try sprinkling some roughly chopped cilantro over the top of the dip once it comes out of the oven to add a little freshness.

    Instead of chicken, use cooked ground beef or sausage.

    How to Store the Leftovers 

    Always toss any dip you have already served to prevent someone from getting sick. However, you can keep extra unserved dip in the refrigerator.

    Let the dip cool, and then transfer it to an airtight container. Try not to disturb the dip too much so the cheese layer remains on top.

    How Long Does It Last?

    The dip will last up to three days in the fridge, but the sooner you eat it, the better.

    To rewarm the dip, put it in an oven-safe dish and allow it to sit on the counter for a few minutes to shake off the cold. Cover the dish with aluminum foil and put it in a 325-degree Fahrenheit preheated oven for 15 to 20 minutes or until it is hot all the way through.
